FROM THE UNION KITCHEN: Gabi’s Pickle Relish

Be warned – this recipe makes about 20 jars! Plenty for your friends & family this Christmas.

You will need to sterilise your jars in advance – there’s a good guide here.

  • 4 kilos of ground cucumbers
  • 0.5 kilo of peppers
  • 0.5 kilo of carrots
  • 0.5 kilo of onions
  • Cup of spirit vinegar
  • Cup of sugar
  • Cup of vegetable oil
  • 4 table spoons of salt
  • 3 spoons of cayenne pepper (optional)
  • Whole head of garlic

Cut the cucumbers into circles and the onions thinly.

In a large bowl mix the onions and cucumbers with salt. Leave to stand for 2 hours and drain the water released by the veg

In a large pot add all the vegetables and the remaining ingredients and bring to the boil. Add some cayenne pepper if you would like a bit of a kick. Let it simmer for around 15 minutes.

While it’s bubbling start placing it in jars, making sure you get veggies and brine!

Submerge the jars half way in a pot of boiling water. Simmer the water for around 15 minutes.

Carefully remove the jars and flip them upside down. This creates a vacuum in the jar and seals it.

Once they have cooled, store in a cool place.
