Melt the butter and honey with the vanilla and the cinnamon.
Pre heat the oven to 150C, then mix all the dry ingredients, except the dried fruit which we add later.
Pour the melted mixture over the dry ingredients and mix well.
Lay out on a flat tray and bake in the oven for about 15-20 minutes until golden and toasty and your kitchen is filled with the most delicious aroma. Be sure to stir it every 5 minutes or so to ensure it toasts evenly.
Take out and leave to cool completely while you prepare the fruit.
Dice up evenly whichever dried fruits you like: sultanas (no need to chop), apricots, fig, cranberry, mango, cherry all taste great.
When the granola is completely cool mix the fruit in well and store in a sealed container or bag up for a gift. It will keep well for at least a month!
